Wild Plum Hot Sauce

We're adding intense heat to some wild plums to make a delicious hot sauce. This sauce is equally good on wings or chips. You can dial up or down the heat level depending on the peppers you use.

Ingredients
  

  • 1-2 lb wild plums Can also use regular plums
  • 2 tbsp apple cider vinegar
  • 1 tsp Worcestershire sauce
  • 1/3 c brown sugar dark is best
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1 tbsp red pepper flakes
  • 2 tsp ground Carolina Reaper Can use jalapeño or habanero: spice to your taste

Equipment

  • 1 Sauce Pan Large
  • 1 Sauce Pan Small
  • 1 Strainer
  • 1 Large Bowl
  • 1-2 pint jars

Method
 

  1. Place washed plums in large saucepan. Cover with water.
  2. Boil until all plums burst. Use a spoon or other implement to help them along.
  3. Strain mixture into a large bowl. If desired, use some paper towels to press remaining pulp to get all remaining juice.
  4. Transfer 2 cups of the plum juice to a small saucepan on medium-high heat.
  5. Add Worcestershire sauce, vinegar, and brown sugar. Stir to combine.
  6. Add remaining ingredients, stirring to combine until solids are dissolved.
  7. Simmer until it's reduced to your desired consistency.

Notes

  • I love very spicy sauces, so Carolina Reaper was my first choice.  This sweet/tart sauce goes well with all levels of spice, so experiment!
  • I absolutely love this sauce on hot wings, but it’s also a great sauce to put on a spicy wrap or sandwich.
