
Wild Plum Hot Sauce
We're adding intense heat to some wild plums to make a delicious hot sauce. This sauce is equally good on wings or chips. You can dial up or down the heat level depending on the peppers you use.

Method
- Place washed plums in large saucepan. Cover with water.
- Boil until all plums burst. Use a spoon or other implement to help them along.
- Strain mixture into a large bowl. If desired, use some paper towels to press remaining pulp to get all remaining juice.
- Transfer 2 cups of the plum juice to a small saucepan on medium-high heat.
- Add Worcestershire sauce, vinegar, and brown sugar. Stir to combine.
- Add remaining ingredients, stirring to combine until solids are dissolved.
- Simmer until it's reduced to your desired consistency.
Notes
- I love very spicy sauces, so Carolina Reaper was my first choice. This sweet/tart sauce goes well with all levels of spice, so experiment!
- I absolutely love this sauce on hot wings, but it’s also a great sauce to put on a spicy wrap or sandwich.
